Soft and Chewy Chocolate Chip Cookie Recipe

I finally found the best soft and chewy chocolate chip cookie recipe! I made a few changes from the original cookie recipe I found online, so it won't turn out super sweet since my husband isn't a sweet tooth.

Soft and Chewy Chocolate Chip Cookie Ingredients (12 large cookies)

  • 1/2 cup powdered sugar
  • 1/2 cup brown sugar
  • 1 teaspoon Himalayan salt
  • 1/2 cup unsalted and melted butter
  • 1 medium egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 8 oz dark chocolate chunks
  • 4 oz almond nuts


  1. Whisk together the powdered sugar, brown sugar, salt, and butter in a large bowl until no lumps are left.
  2. Whisk in the egg and vanilla.
  3. Sift the flour and baking soda and fold the mixture with a spatula. Do not overmix.
  4. Fold in the dark chocolate chunks and almond nuts.
  5. Chill the dough for at least 30 minutes if you want to bake it immediately. For deeper color and more flavor, chill overnight.
  6. Preheat the oven to 338°F or 170°C. Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet. Leave at least 10 cm of space between cookies.
  7. Bake for 10 to 12 minutes. Take it out before the edges start to get brown.
  8. Cool completely before serving.
